POSEIDON, THE HIGH QUALITY FOOD SCOTTISH SALMON
Poseidon grows in north-west Scotland in Lake Broom, where the water is pure and has an ideal temperature for the natural growth of salmon. The salmon is born in a third generation family farm, and grows in harmony with another species of fish called wrasses that feed on the sea-lice, allowing the salmon to grow pristine and free from parasites. The salmon is filleted by hand in the smokehouse in the heart of the English countryside the day after being caught, massaged with natural salt and left to marinate for around 10 hours. Subsequently it is washed and hung in the smokehouse where it is smoked with juniper, beech and oak with a ventilation system that allows a continuous injection of new smoke and a constant extraction that generates a delicate smoke, designed to add smoky notes without covering the flavor outstanding than the salmon itself. The salmon is cut with a unique style called «sashimi style». This cutting method allows you to appreciate all the characteristics of the salmon, from the smoked notes to the soft texture.
