Panko is a breading typical of Japanese cuisine, especially used in the preparation of fried foods. It gives the traditional tempura a particular lightness and crunchiness. In fact, unlike classic breading, Panko is very light, it does not fry but by incorporating air it tends to make the excess oil slip off the fried meat and vegetables. Unlike our breadcrumbs, Panko is made up of flakes or chips, not coarse grains. It is not prepared with traditional oven cooking, but with a special cooking using electric current.
